Tvargle and beer? In Velká Bystřice!

Do you like tvarůžky? How about beer, do you like it? In this interview, we introduce Blanka Poštulková and David Kapsia, who are in charge of everything related to these two delicacies. They work in the cheese factory and brewery TVARG in Velké Bystřice.  We bring you another interview with the personalities of tourism in the Olomouc Region.

There can be no doubt that you like tvargle and beer. But how do you like tvargle best - in what form?

David: I like tvargle on fresh bread, with good butter and onions. With a properly chilled beer.

Blanka: I grew up on tvarůžky, so I'm not afraid of any flavour combinations. The tvarůžková kremrole stuffed with a spread of fragrant tvarůžky wins my heart.

What is your favourite beer?

David: Honestly bitter lager, that's the base. In recent years, I've enjoyed discovering the flavours of top-fermented beers. Currently I'm quite fond of sour beers (note: sour beer is a fresh strong beer with a distinct fruity, sour taste).

 Blanka: Black beer and its chocolate-coffee notes that TVARG brewers can give to beer😊    

Can tvargles "fail"? And what about beer, how can a batch go wrong?

David: Making beer and tvarůžky is a biochemical process. With tvarůžky, the quality of the curd and the time of year play a major role, which is why batches are slightly different. As far as beer is concerned, there is a degeneration of the brewer's yeast, which can cause a deterioration in the quality of the beer - its taste and aroma.      

Why did you choose Velká Bystřice as a place to run your business?

David: We found a unique object that combined everything that the TVARG project deserves. The brewery cellars, where we could recreate the brewery production and the stone cellars for the tvarůžkárna. The revival of an unused site where we are writing the next chapter of its story in the 21st century.

Blanka: I also like the atmosphere among the people in Bystřice. There are a number of cultural and folklore events held here throughout the year, in which the local people collaborate. So even though it's not a big town, there is always something going on, it's alive here.      

When guests come to visit you in Tvarg, what activities would you recommend for them around Velká Bystřice?

Blanka: A walk to the dam above Velká Bystřica, where a hiking trail leads to Svatý Kopeček with its basilica and zoo. Or a trip to the valley in the direction of Hlubočky - Hrubá Voda, where there are many possibilities for hiking or adventures on the bobsleigh track.

David: I like the location of Velké Bystřice, which is colourful in itself. I recommend the castle park with its original tree swings just for a stroll. There is also a great cycle path, suitable for roller skates or children's scooters. Moreover, do you know the pumptrack in Velká Bystřice?      

What is your favourite place to visit in the Olomouc region and why?

Blanka: The fairytale castle Bouzov and the view from the castle tower. On hot summer days, a tour in the Javoříč Caves, which have beautiful stalactite decorations.

David: I liked the area around Šumperk. It's easily accessible by train and offers a lot of activities - hiking not only in the city, the proximity of the hills and the views of the Jeseníky Mountains are amazing. Personally, I really like the hike from Bludov to Bludovecek.    

What's new in Tvarg - can you invite readers to an event, introduce a new product, plans...

Blanka: We've had our TVARGLE Fest - a gastronomic festival with a focus on beer and tvarůžky, which takes place regularly in mid-September.

David: We have now made available a tour of the stone cellars of the tvarůžkárna, where TVARGLE is aged. We also brewed an autumn beer special, pumpkin beer. And we are slowly getting ready for the winter season - we will brew a lager with Christmas spices.    

Could you share a smiley experience with a guest, a customer in the shop, or a tour participant?              

Blanka: It always amuses me when customers ask if we like tvarůžky and if we eat it at all...               

David: People often think that a ten-day beer lasts 10 days and a twelve-day beer lasts 12 days - that's very funny to me as a brewer. That's why during our tours we explain to the visitors what is actually the designation of the degree of Czech beer (of course not only that).
