Bistro Paulus is a new project of Michelin-starred chef Roman Paulus, who decided to build a novel concept of a modern bistro in the heart of Olomouc.
He combines high-quality classic Czech cuisine with ideas he has picked up in his professional life around the world - all as simply but perfectly as possible. On the one hand, a platter and dishes on a board, on the other hand, top quality, ideas and experience in an unusual and relaxed space. Welcome to the canteen for the 21st century.
In the evenings and weekends, the canteen offers its extraordinary space for corporate events, private parties or family celebrations. They also plan other events - under the guidance of owner Roman Paulus or chef Petr Stoklasek, tasting dinners, cooking schools or interesting events related to art and experiences.
